My name is Nicola De Gregorio, I have been a farmer since 2011, the year in which I interrupted a ten-year path of ethno-anthropological research on Sicilian peasant and food traditions to devote myself full time to the land.
My company - entirely centered on the conservation, recovery and enhancement of native biodiversity - is called Fastuchera (pistacchio in Sicilian dialect), a name that, at the same time, wants to look at the past of my places, partly modified by the "green revolution ”, and to the future that we are trying to design and build by giving back to those places what has been taken from them.
Fastuchera has been an organic farm since it was born and it sustains itself mainly through the harvest of three ancient Sicilian grains - Tumminìa, Russulidda and Maiorca - grown in rotation with nitrogen-fixing legumes, in particular with chickpeas and lentils. With the harvest, which I keep in its entirety and personally bring it to be milled about every two weeks, I produce various types of artisanal pasta, entirely made with stone-ground flour and mineral water, pasta shapes that are bronze-drawn and dried at low temperatures by 36 to 48 hours to preserve all its nutritional properties.
Finally, Fastuchera is also the official site of a conservation field of ancient Sicilian fruits on the verge of extinction and of a nascent Sicilian Ethnobotanical Garden, an environmental project under construction intended for new and future generations which will be open for use in 2025 .
