Produced directly from our Catarratto white wine, it is the typical vinegar of the Sicilian tradition, strong but at the same time rich in perfumes and aromas.      

It is the result of slow static biooxidation in chestnut and oak barrels at room temperature.

The result is a vinegar with a deep amber color, which enhances the flavors of a good salad, vegetables and fish, lending itself perfectly to caponata and other sweet and sour dishes of Sicilian cuisine and beyond.

Unfiltered, unpasteurized. 250ml.
