Only Taggiasca olives harvested and processed on the same day, carefully selected by hand. The olives are washed for a month with just water and then continue the fermentation in brine, to which we add thyme and bay leaves. Once ready, these are pitted by hand, one by one, and dried for a long time. We won't tell you more because this recipe must remain a secret. THEY ARE INCREDIBLY CRISPY, DELICIOUS.
