One of the recipes most appreciated by gourmets. In Calabria we are lucky, the famous "RED ONION OF TROPEA" is grown, which, thanks to the work done by the onion protection consortium, has obtained important recognition for its characteristics, flavour, colour, shape and sweetness. The red onion from Tropea in the countryside is, in my opinion, the best way to consume the onion. Small oblong shaped onions are used. 


They are blanched in wine vinegar, flavored with juniper berries and mint, extra virgin olive oil, black peppercorns and bay leaves. We have thus obtained the queen of preserves.
