Our dry-cured sausage is prepared from wild deer meat, taken from the vast natural spaces of France. Venison is a lean, healthy meat that is considered “light” because it is 25 times less fat than beef. It is rich in potassium, iron and phosphorus.
Wrapped in a natural casing, this allows slow maturation and optimal preservation of aromas. Each sausage is hand-knotted, reflecting our commitment to an artisanal and traditional process.
